Nitrate is one of the most common contaminants in German groundwater. It enters the soil above all through excessive fertilisation in agriculture, but also through sewage treatment plants and leaking sewer systems. According to the Federal Environment Agency, around 20 percent of groundwater monitoring points exceed the limit of 50 mg/l. Regions with intensive livestock farming and arable agriculture are particularly affected, such as Lower Saxony, North Rhine-Westphalia and parts of Bavaria.
The legal requirements of the EU Nitrates Directive do call for a reduction, but implementation is faltering. For consumers this means the danger is real, and taking responsibility for protecting one's own drinking water is becoming ever more important.
The main source of nitrate in groundwater is agricultural fertilisation. Nitrogen fertiliser, whether mineral or organic, is not fully absorbed by plants. Excess nitrate is washed out with rainwater and seeps into the groundwater. Slurry from intensive livestock farming also contributes considerably to the burden.
Further sources are leaking sewage pipes, sewage sludge and even domestic gardens where too much fertiliser is applied. The problem: nitrate is water-soluble and extremely mobile. Once it has reached the groundwater it often remains there for decades, even when the inputs are stopped.
The health risks of nitrate should not be underestimated. In the body nitrate is converted into nitrite, which impedes the uptake of oxygen in the blood. Infants and small children are particularly at risk - in them it can lead to what is known as blue baby syndrome (methaemoglobinaemia), which can be life-threatening. Pregnant women and people with gastrointestinal conditions should also avoid elevated nitrate levels.
In the long term nitrate is suspected of being carcinogenic, since it can be converted into nitrosamines in the body. The World Health Organization (WHO) therefore classifies nitrate as probably carcinogenic. Anyone living in a region with high nitrate levels or using their own well should have their water tested regularly.
In Germany a limit of 50 mg/l applies to nitrate in drinking water, laid down in the Drinking Water Ordinance. For infant formula a maximum of 10 mg/l is recommended. Many water suppliers stay below these values, but with private wells or in rural areas the burden can be considerably higher.
The European Commission has already warned Germany several times about excessive nitrate levels. The values must be reduced across the board by 2027 - whether that will succeed is questionable. For consumers, taking the initiative therefore remains the safest route.

At the political level, environmental organisations are calling for stricter fertiliser regulations and more inspections. As a consumer you can help reduce nitrogen inputs through conscious consumption of organic produce from regional agriculture.
Nitrate in groundwater is a serious problem that will not disappear overnight. Anyone wishing to protect their health should not rely on statutory limits alone. With modern filter systems such as reverse osmosis you have control over your drinking water, and without great effort. Test your water, find out about levels in your region and invest in a lasting solution.
